There are 4 types for dried shrimp: broken, Normal, Medium, Premium.
The better the grade, the sweeter and more fragrant it is.
Preparations:

Wash with clean water and soak the dried shrimps in hot water for around 30mins (depending on size). Ready for cooking.
Do not throw the soaked water away, it can be used as a stock for cooking.
Dried shrimp have tender meat, sweet taste and strong aroma. bringing a unique umami flavour to a wide variety of Asian dishes including soups, stews and stir-fries.
Perfect for adding to congee, stir fry with bean thread noodles and stir fry vegetables!
